- Bayou Rum XO is the pinnacle of Bayou Rum, inspired by the spirit of the New Orleans Mardi Gras celebration. The humidity created by the bayous, river and tropical climate creates a unique microclimate that allows for a gentler aging process
- Bayou Rum XO Mardi Gras is locally crafted using Louisiana sugarcane molasses, grown in the rich alluvial soils of the Mississippi River Delta and produced by the oldest operating American sugar mill since 1829. After fermentation, the rum is distilled in one of the finest copper pot still systems in the world. The rum is then aged for 5 years in bourbon casks and 1 additional year in Pedro Ximenez sherry casks, adding more complexity and roundness to this exceptional Ultra Premium rum
