- PREMIUM JAPANESE STEEL - The damascus steel blade is hand forged in Japan from 66 layers of high carbon stainless steel with an ultra sharp VG-10 steel core and is hand sharpened to a 14 degree angle by skilled Kimura craftsmen. The blade is heat treated to 61 HRC which offers a strong combination of edge retention, sharpness and rust resistance.
- HAMMERED FINISH - Kimura's japanese damascus steel knives have a traditional hammered finish completed by hand (tsuchime). This helps prevent food from clinging to the blade when chopping.
- MADE TO LAST - Our Japanese damascus steel knives are made from a single piece of hand forged 67-layer damascus steel with a full tang that is triple riveted and bolstered, which together provides exceptional strength and durability - Kimura s knives are sure to stand the test of time.
- ERGONOMIC & SAFE HANDLE - The handle is crafted from premium pakka wood which is non-slip and easy to grip offering superior comfort. Pakka wood is also heat and moisture resistant making it highly durable in the kitchen. Accompanied with a full bolster, the knife handle is ergonomic allowing chefs to choose between a regular, pointed finger or pinch grip.
